Pâtes au Pistou

Pâtes au Pistou

A delicious recipe that will send you directly to Provence on a terrass in the sun. 

Ingredients for 4 servings
- 500g of pasta
- 1 big bunch of fresh basil
- 3/4 garlic cloves (more or less depending on your liking)
- extra virgin organic olive oil
- 1 good handful of freshly grated parmesan cheese
- 1 handful of pine nuts
- 2 tomatoes

1. Cook the pasta in a big pot of boiling salted water 
2. Cut your tomatoes in small pieces, salt them and let them drain in a strainer
3. Peel and mince the garlic with a garlic press, reserve on the side
4. Place the pine nuts in a food processor and blend slightly, reserve on the side
5. Place the parmesan chunks in a food processor and blend, set half aside
6. Add the basil leaves, garlic, pine nuts and olive oil to the parmesan and mix together
7. Season with freshly ground black pepper
8. Move the pasta to a finishing pan with tongs and pour in your pistou
9. Add your tomatoes and top with more parmesan
